Skinny Chicken Stroganoff

The addition of turkey bacon adds a wonderful, smoky flavor to an "enlightened" classic. 

Ingredients

  • 4 slices turkey bacon, cooked and crumbled
  • 6 ounces uncooked extra-broad cholesterol-free egg noodles
  • 3/4 cup reduced-fat sour cream
  • 1/4 cup all-purpose flour
  • 1 can (14 1/2 ounces) 99% fat-free chicken broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 8 ounces mushrooms, sliced
  • 1 cup chopped onion
  • 1 pound boneless, skinless chicken breasts, cut into 1/4-inch strips
  • 1   clove garlic, pressed
  • 2 tablespoons snipped fresh parsley

Directions

  1. Cook bacon in Stir-Fry Skillet over medium heat until crisp. Remove bacon from pan; crumble and set aside. 

  2. Cook noodles according to package directions in (4-qt.) Casserole; drain and keep warm. Meanwhile, in Small Batter Bowl, whisk together sour cream and flour until well blended using Stainless Whisk. Gradually whisk in chicken broth until mixture is smooth. Stir in salt and black pepper; set aside.

  3. Slice mushrooms using Egg Slicer Plus®. Chop onion using Food Chopper. Slice chicken into 1/4-inch strips using Utility Knife. Add chicken to skillet; cook and stir over medium-high heat 5 minutes or until no longer pink. Remove from skillet; keep warm.

  4. Reduce heat to medium. Add mushrooms, onion, and garlic pressed with Garlic Press. Cook and stir 3 minutes. Return chicken and reserved bacon to skillet. Stir in sour cream mixture; bring to a boil. Reduce heat and simmer 2 minutes, stirring constantly. Stir in parsley; serve over noodles.

Cook's Tips:

Cholesterol-free egg noodles have the same taste and texture as regular egg noodles. They are made with enriched flour, enriched corn flour and dried egg whites and do not contain egg yolks. They can be found in the dry pasta section of most supermarkets.

You can slice fresh mushrooms in no time using the Egg Slicer Plus®. For best results, choose fresh, firm mushrooms. Wipe mushrooms clean with a damp paper towel and trim off stem end. Place each mushroom stem end up in the egg slicer and slice.
