Turkey Loaf With Garlic Mashed Potatoes

A childhood favorite, meat loaf and potatoes are as popular as ever. This updated version, featuring ground turkey topped with creamy garlic mashed potatoes, is a perfect meal for any meat-and-potato lover.

Ingredients

    Turkey Loaf
  • 1 pound lean ground turkey
  • 1/2 cup rolled oats
  • 1/3 cup chili sauce or catsup
  • 1/3 cup onion, finely chopped
  • 1   egg
  • 1   garlic clove, pressed
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
    Garlic Mashed Potatoes
  • 1 1/2  pounds all-purpose potatoes
  • 5   garlic cloves, peeled
  • 1/3 cup fat-free sour cream
  • 2 tablespoons skim milk
  • 2 tablespoons fresh parsley, snipped
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Directions

  1. Preheat oven to 350°F. In Classic Batter Bowl combine turkey loaf ingredients; mix well with Pastry Blender. Press into (9-in.) Pie Plate. Bake 25 minutes.

  2. Meanwhile, cut potatoes into 1-inch pieces. Cover potatoes and garlic with water in covered (3-qt.) Saucepan. Bring to a boil; reduce heat and cook 8-10 minutes or until potatoes are tender. Remove garlic cloves. Drain potatoes; mash using Nylon Masher. Press garlic into potatoes with Garlic Press. Stir in remaining ingredients; mix well.

  3. Remove turkey loaf from oven and top with potato mixture. Return to oven and bake 10-15 minutes or until top is lightly browned. Serve using Slice 'N Serve®.

Cook's Tips:

Prepare turkey loaf according to directions except press into Stoneware Loaf Pan. Bake 40 minutes. Remove from oven and top with potato mixture. Return to oven and bake 15-20 minutes or until top is lightly browned.

Add flavor, not fat, to mashed potatoes by substituting chicken or vegetable broth for butter or milk.

Check labels to be sure you’re buying lean ground turkey. Many ground turkey products contain the dark meat and fatty skin.
