Grilled Pineapple Sundaes
This simple fruit dessert is a snap to prepare. After grilling your main dish, toss the pineapple slices on the grill before it cools.
- 1 whole fresh pineapple, peeled and cut into 3/4-inch-thick slices (about 8 slices)
- 2 tablespoons butter or margarine, melted
- 2 cups vanilla ice cream or sorbet such as coconut or pineapple
- 1/4 cup toasted coconut
- 1/4 cup chocolate ice cream topping
Lightly grease grid of grill. Using Chef's Silicone Basting Brush, brush both sides of pineapple slices with melted butter and place on grid of grill. Grill, covered, over medium coals 6 minutes per side or until grill marks appear. Remove pineapple from grill to serving dishes.
To serve, top pineapple with a scoop of ice cream, toasted coconut and ice cream topping.
