You’ll love the Mediterranean flavors of these chicken pitas with Green Goddess Seasoning full of bright herbs and zesty onion.

Ingredients

    Chicken Pitas
  • ¼ cup (60 mL) Greek yogurt
  • 2 tbsp (30 mL) Green Goddess Seasoning Mix
  • 1½ lbs. (700 g) chicken breast cutlets
  • 6   pitas
  • 2 tsp (10 mL) oil
  • 6   romaine lettuce leaves
  • ½   seedless cucumber, finely chopped (about 1 cup/250 mL)
  • ¼ cup (60 mL) red onion, thinly sliced
  • 2 small plum tomatoes, cut into chunks
  • ½ cup (125 mL) feta cheese crumbles
  • ½ cup (125 mL) Kalamata olives, pitted
    Green Goddess Dressing
  • ¼ cup (60 mL) olive oil
  • 2 tbsp (30 mL) Green Goddess Seasoning Mix
  • 1 tsp (5 mL) honey
  • 1½ tbsp (22 mL) white wine vinegar

Directions

  1. Combine the yogurt and seasoning in a medium bowl and whisk to incorporate. Add the chicken and use tongs to coat. Set aside.
  2. Combine the dressing ingredients in a small bowl; set aside
  3. Preheat the oven to 375°F (190°C). Place the pitas on a baking sheet.
  4. Heat the oil in a grill pan over medium-high heat for 3 minutes. Working in batches, grill the chicken for 4–5 minutes per side, or until the temperature reaches 165°F (74°C).
  5. Place the baking sheet with the pitas in the oven and immediately turn off the oven. Let the pitas warm in the oven while chicken rests, about 5 minutes.
  6. Cut the chicken against the grain into thin slices.
  7. To assemble, fill each pita with sliced chicken, a piece of romaine, cucumber, red onion, tomatoes, feta, and olives. Drizzle with 1 tbsp (15 mL) of the dressing.

Cook's Tips:

Simple Salad: To make this a salad, omit the pita and serve on top of chopped romaine lettuce.

Sandwich Style: Instead of a pita, you can serve this on your favorite sandwich bread. Just slice the tomatoes and cucumber and serve it as-is, or toast it for a few minutes in an air fryer!
