Easy Black Bean Chili

Directions

  1. In a medium saucepan add a little oil, 1 chopped onion, 1 chopped bell pepper and 2 garlic cloves, pressed, cook until softened. To the pan add 2 cans (15 oz/425 mL) black beans, drained and rinsed, 1 can (28 oz/796 mL) diced tomatoes, undrained, 1 can (15 oz/425 mL) tomato sauce and 1 tablespoon (15 mL) chili powder or your favorite chili seasoning mix. Bring to a boil and simmer over medium low, covered for 30 mins. Garnish with sour cream and cilantro, if you’d like.

Yield:

  • 4  servings of 1 1/2 cups
