Slow Cooker Sloppy Joes

These sloppy joes are packed with hidden veggies—so the whole family will feel good eating them, and you’ll feel good serving them!

Ingredients

  • 1 tbsp (15 mL) oil
  • 1 lb. (450 g) lean ground beef
  • 2 small carrots, very finely chopped or shredded
  • 1   onion, very finely chopped
  • 1 small zucchini, very finely chopped or shredded
  • ⅛ tsp (0.5 mL) each salt and pepper
  • ½ cup (125 mL) ketchup
  • ½ cup (125 mL) barbecue sauce
  • 2 tbsp (30 mL) Worcestershire sauce
  • 1 tbsp (15 mL) brown sugar
  • 4   hamburger buns

Directions

  1. Set the Deluxe Multi Cooker to SEAR on high for 25 minutes. Heat the oil in the inner pot for 1–3 minutes.
  2. Add the beef and break it into crumbles while cooking until no longer pink, about 10–12 minutes.
  3. Add the carrots, onion, zucchini, salt, and pepper, and continue cooking for about 10 minutes. Press CANCEL.
  4. Add the ketchup, barbecue sauce, Worcestershire sauce, and brown sugar. Set to SLOW COOK on High for 6 hours or Low for 8 hours, and lock the lid or use the Pressure Cooker Glass Lid.
  5. Scoop the meat onto hamburger buns to serve.
