Chicken Tacos Your Way

Ingredients

  • 1 ½ lbs (700 g) chicken tenders
  • 12   large yellow corn taco shells
    Classic
  • 2 ½ tbsp (37 mL) Everything Taco Seasoning
  • 1 cup (250 mL) chunky salsa
  •  Optional: shredded lettuce, diced tomatoes, grated cheddar
    Asian Tacos
  • 1 cup (250 mL) ketchup
  • 2½ tbsp (37 mL) Crunchy Garlic Crisp Seasoning Mix
  • 2 tbsp (30 mL) cider vinegar
  • 2 tbsp (30 mL) brown sugar
  • 1 tbsp (15 mL) low-sodium soy sauce
  •  Optional: fresh cilantro leaves, chopped penuts, sliced green onions, grated carrot
    Barbecue
  • 1 cup (250 mL) ketchup
  • 2½ tbsp (37 mL) Smoky Barbecue Rub
  • 2 tbsp (30 mL) cider vinegar
  • 2 tbsp (30 mL) brown sugar
  •  Optional: coleslaw mix or red cabbage slaw, chopped dill pickles, grated cheddar, sliced green onions

Directions

  1. Choose a variation. Preheat the oven to 350°F (180°C) to heat taco shells.
  2. Place chicken and sauce ingredients in the Deep Covered Baker and thoroughly combine. Microwave, covered, on HIGH for 8-11 minutes or until internal temperature of chicken reaches 165°F (74°C).
  3. Meanwhile, prepare desired optional toppings. Carefully remove the baker from the microwave. Using the Salad Choppers, chop chicken into small pieces (see Cook’s Tip).
  4. Arrange shells on a sheet pan; heat according to package oven directions. Fill each taco shell with about ¼ cup (50 mL) chicken mixture. Sprinkle with toppings just before serving.

Yield:

  • 6  servings of 2 tacos

Cook's Tips:

Use the rounded end of the Salad Chopper to scoop up the chicken for easier chopping. See step 3.
