Alfredo Stuffed Shells
Spinach, artichokes, and homemade Alfredo sauce fill every shell with creamy, cheesy flavor for a dinner everyone will love.
Ingredients
- Shells & Filling
- 12 jumbo shells (see cook’s tip)
- 15 oz. (425 g) ricotta cheese
- 1 pkg (8 oz./300 g) frozen spinach, thawed and firmly squeezed dry
- 1 jar (12 oz./340 g) artichoke hearts, drained and chopped
- 1 pkg Spinach Dip Mix
- ½ oz. (15 g) Parmesan cheese, finely grated (¼ cup /60 mL)
- Oil for greasing
- Alfredo Sauce
- ¼ cup (60 mL) butter (½ stick)
- 4 oz. (125 g) cream cheese
- 1½ cups (375 mL) half & half
- 2 oz. (60 g) Parmesan cheese, finely grated (1 cup /250 mL)
- Topping
- 8 oz. (250 g) mozzarella cheese, coarsely grated (2 cups /500 mL)
Directions
- Preheat the oven to 400°F (205°C)
- Place the shells in the 3-qt. (3-L) Micro-Cooker®. Cover with water by ¼" (6 mm). Microwave, covered, for 8–10 minutes, or until al dente. Drain the pasta and set aside until it’s cool enough to handle.
- Combine the remaining filling ingredients in a large bowl.
- Lightly grease the Fully Glazed Stone Round Baker with oil. Fill each shell with the filling and place them in the baker.
- Place the cream cheese and butter in the Micro‑Cooker®. Microwave, covered, for 1 minute. Stir to combine.
- Add the remaining sauce ingredients and microwave, covered, for another 1–2 minutes, or until the cheese is melted. Stir to combine.
- Pour the sauce over the shells, cover with foil, and bake for 30 minutes.
- Remove the foil and sprinkle with the mozzarella. Bake for 15–20 minutes, or until the cheese is browned. Let it sit for 5–10 minutes before serving

Cook's Tips:
Jumbo pasta shells can vary in size, so fill as many as you can with the mixture. If your shells are larger, you may have a little filling left over.
For less mess and waste, rinse thawed frozen spinach and spin it dry in the Salad & Berry Spinner. Spin the knob about 4 times, drain, and repeat if needed.
Cooking times may vary based on your microwave oven’s power and efficiency. Follow your microwave’s instruction manual and adjust times accordingly.
