Brown Butter Tortellini

Brown butter meets maple spice for a savory and slightly sweet and quick pasta dinner.

Ingredients

  • 1-1½ lbs. (450-700 g) cheese or any flavor tortellini
  • ¼ cup (60 mL) reserved pasta water
  • ½ stick (¼ cup/60 mL) butter, sliced
  • 2 tbsp (30 mL) Savory Maple Spice Blend
  • 5 cups (1.2 L) fresh baby spinach
  • 2 tbsp (30 mL) shaved Parmesan cheese
  • ½ tbsp (7 mL) balsamic vinegar
  •  Squeeze of fresh lemon juice (optional)

Directions

  1. Cook the tortellini in a large pot according to the package directions until just done. Reserve ¼ cup (60 mL) of the pasta water.
  2. Brown the butter in the 12” Brilliance Nonstick Weeknight Skillet over medium heat, stirring occasionally until it browns, around 5-7 minutes. (It will smelly nutty).
  3. Add the Savory Maple Spice Blend and stir well.
  4. Transfer the tortellini and reserved pasta water into the skillet and add the spinach. Toss over medium-low heat until the spinach has wilted.
  5. Add the Parmesan, vinegar, and lemon juice, if you’d like, right before serving.

Cook's Tips:

You can add cooked sliced pork tenderloin or white beans for added protein.

Check the tortellini on the shorter side of the cooking time. Since you’re tossing it with the brown butter sauce, it will continue to cook a little bit more.

The acidity from the vinegar (and lemon juice) helps to balance the richness of the butter.
