Broccoli Slaw Ramen Salad
Sweet, crunchy and nostalgic, this autumnal twist on a broccoli salad will make everyone love their veggies.
Ingredients
- Spiced Almonds
- ½ cup (125 mL) slivered almonds
- 3 tbsp (45 mL) brown sugar
- 1 tsp (5 mL) cinnamon
- 1 tbsp (15 mL) water
- Dressing
- ¾ cup (175 mL) mayonnaise
- 2 tbsp (30 mL) white vinegar
- ¼ cup (60 mL) sugar
- ¼ tsp (1 mL) cinnamon
- Salad
- 8 cups (2 L) broccoli, 2 crowns cut into 1” (2.5 cm) bite-sized pieces
- 2 Gala apples, cored
- 1 cup (250 mL) dried cranberries
- 1 pkg (3 oz./85 g) ramen noodles, crushed and seasoning packet removed
Directions
- Combine the ingredients for the spiced almonds in the Electric Pop & Stir. Select the NUTS setting and cook until the nuts look sandy, about 6 minutes.
- Whisk together the dressing ingredients in a large bowl.
- Slice the apples into matchstick pieces with the Rapid Prep Mandoline on #8 of the julienne setting.
- Add the salad ingredients and half of the almonds to the bowl with the dressing. Stir until all ingredients are coated in the dressing.
- Refrigerate for at least an hour.
- Top with the remaining nuts and serve.

Cook's Tips:
This is a great make-ahead side dish or app. Mix it up without the nuts or ramen up to 2 days ahead of time, cover and add the ramen and nuts when you’re ready.
Dried cranberries add a bit of sweetness and some tart flavor. If you don’t have them or you aren’t a fan, raisins work as well!
Try using the dressing for a coleslaw. Mix it up and toss with a bag of coleslaw mix or cut up your own cabbage and grated carrot.
Try this with Korintje Cinnamon for even more cinnamon flavor.
