French Onion Soup

This rich, comforting soup is easy to make with the Deluxe Multi Cooker. Caramelize onions to golden perfection and finish with cheesy, crunchy croutons

Ingredients

    Soup
  • 2   large onions, thinly sliced (about 20 oz./570 g)
  • 2 tbsp (30 mL) butter
  • 2 qts. (2 L) low-sodium beef broth, divided
  • ½ cup (125 mL) dry red wine (see cook's tip)
  • 1 tbsp (15 mL) flour
  • 2 tbsp (30 mL) French Onion Dip Mix
    Croutons
  • 1   demi baguette (about 6 oz./175 g), cut into bite-sized cubes (about 4 cups/1 L)
  • 2 tbsp (30 mL) butter, melted
  • 2 tsp (10 mL) French Onion Dip Mix
  • 4 oz. (125 g) Gruyere or Swiss cheese, grated (1 cup/250 mL)

Directions

  1. Place the onions, butter, ½ cup (125 mL) of the broth, and all the wine in the inner pot of the Deluxe Multi Cooker. Set to CUSTOM (high pressure) for 8 minutes. When the timer is up, press CANCEL. Press STEAM-RELEASE to manually release the pressure.
  2. Carefully drain and reserve the liquid from the onions and return the onions to the inner pot. Set the Deluxe Multi Cooker to SEAR on high for 10 minutes. Cook until the onions are golden brown and caramelized, about 5–8 minutes, stirring often.
  3. Add the flour and stir to combine. Add the remaining broth, reserved onion liquid, and dip mix; stir to combine. Set to SOUP for 2 minutes and press START. When the timer is up, press CANCEL. Press STEAM-RELEASE to manually release the pressure.
  4. Meanwhile, set the Deluxe Air Fryer & Oven to BAKE at 400°F (205°C) for 5 minutes.
  5. Toss the bread cubes with the melted butter and dip mix. Spread evenly onto the Sheet Pan. When the display says, “Add Food,” place the pan in the oven and press START.
  6. Remove the sheet pan and arrange the bread cubes so they’re touching and sprinkle with the cheese. Set to BROIL for 1 minute. When the display says, “Add Food,” place the Sheet Pan into the oven to melt the cheese.
  7. Top the soup with the cheesy croutons before serving.

Cook's Tips:

Swap the red wine for white wine for a lighter flavor, or use extra broth.

Use vegetable broth instead of beef broth for a vegetarian version.
