Chicken & Stuffing Casserole
This delicious casserole is the definition of comfort food. It’s easy to put together, freezes well, and makes enough for the whole family.
Ingredients
- 4 oz. (125 g) cream cheese
- ½ cup (125 mL) sour cream
- 2 tbsp (30 mL) cornstarch
- 2 tsp (10 mL) Rotisserie Seasoning
- 4 cups (1 L) chicken broth, divided
- 2 lbs. (1 kg) boneless, skinless chicken thighs, cut into chunks
- 1 bag (12 oz./350 g) frozen peas and carrots
- ½ cup (125 mL) butter (1 stick), diced
- 2 boxes (6 oz. each) or 260 g total stuffing mix, any flavor
Directions
- Preheat the oven to 400°F (200°C). Microwave the cream cheese in a large bowl for 30–45 seconds, or until very soft. Stir in the sour cream, cornstarch, and seasoning. Slowly whisk in 1 cup (250 mL) of the chicken broth. Pour the mixture into the 9" x 13" (23-cm x 33-cm) Brilliance Nonstick Baking Pan.
- Add the chicken and frozen vegetables to the pan and mix to combine. Bake the casserole, uncovered, for 45 minutes.
- Combine the remaining broth, butter, and stuffing mix in a large bowl and microwave for 5–6 minutes, or until the water is fully absorbed. Fluff with a fork.
- Stir the casserole gently before evenly topping with the stuffing. Bake for 15 minutes, or until the stuffing is slightly browned and the filling is bubbling.
