BBQ Chicken Pizza

These easy chicken flatbread pizzas come together fast for a barbecue-inspired meal any day of the week. Try it with your favorite toppings, too!

Ingredients

  • ¼ cup (60 mL) apple cider vinegar
  • 2 tbsp (30 mL) water
  • 1 tbsp (15 mL) sugar
  • 1 tbsp + 1 tsp (20 mL) Kansas City–Style Barbecue Rub, divided
  • ½   red onion, thinly sliced
  • ¼ cup (60 mL) barbecue sauce
  • 4   small naan flatbreads
  • 4 oz. (125 g) white cheddar cheese, grated (1 cup/250 mL)
  • 1½ cups (375 mL) shredded cooked chicken
  • 2 tbsp (30 mL) chopped cilantro

Directions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the vinegar, water, sugar, and 1 tsp (5 mL) of the rub in a medium microwave-safe bowl. Heat until the sugar is dissolved, about 1–2 minutes.
  3. Add the onion to the vinegar mixture and set aside.
  4. Combine the barbecue sauce and remaining rub in a small bowl.
  5. Place the flatbreads on a pizza pan. Spread about 1 tbsp (15 mL) of the barbecue sauce on each one and spread to the edges.
  6. Top with the chicken and cheese. Bake for 8–10 minutes, or until the cheese is melted.
  7. Top with the red onion and cilantro.
