BBQ Chicken Pizza
These easy chicken flatbread pizzas come together fast for a barbecue-inspired meal any day of the week. Try it with your favorite toppings, too!
Ingredients
- ¼ cup (60 mL) apple cider vinegar
- 2 tbsp (30 mL) water
- 1 tbsp (15 mL) sugar
- 1 tbsp + 1 tsp (20 mL) Kansas City–Style Barbecue Rub, divided
- ½ red onion, thinly sliced
- ¼ cup (60 mL) barbecue sauce
- 4 small naan flatbreads
- 4 oz. (125 g) white cheddar cheese, grated (1 cup/250 mL)
- 1½ cups (375 mL) shredded cooked chicken
- 2 tbsp (30 mL) chopped cilantro
Directions
- Preheat the oven to 425°F (220°C).
- Combine the vinegar, water, sugar, and 1 tsp (5 mL) of the rub in a medium microwave-safe bowl. Heat until the sugar is dissolved, about 1–2 minutes.
- Add the onion to the vinegar mixture and set aside.
- Combine the barbecue sauce and remaining rub in a small bowl.
- Place the flatbreads on a pizza pan. Spread about 1 tbsp (15 mL) of the barbecue sauce on each one and spread to the edges.
- Top with the chicken and cheese. Bake for 8–10 minutes, or until the cheese is melted.
- Top with the red onion and cilantro.
