Shrimp Salad Wraps
Delicious carnitas seasoning adds subtle spice to shrimp for a light salad wrap that makes a perfect lunch or dinner. Add this to your weekly rotation!
Ingredients
- Dressing
- ½ cup (175 mL) sour cream or Greek yogurt
- 1½ tbsp (22 mL) Carnitas Slow Cooker Seasoning
- 1 tbsp (15 mL) fresh lime juice
- 1 tbsp (15 mL) mayonnaise
- Wraps
- 20 uncooked large shrimp (31–40 count), peeled, deveined, and tails removed (about 8 oz./250 g)
- 1½ tbsp (22 mL) Carnitas Slow Cooker Seasoning
- 1 head romaine lettuce, chopped
- 4 10" (30-cm) wraps or tortillas
- 1 medium tomato, chopped
- ½ cup (125 mL) frozen corn, thawed
- 1 can (15 oz./425 g) black beans, drained and rinsed
- 1 green onion, sliced
- 2 oz. (60 g) Monterey Jack cheese, coarsely grated (about ½ cup/125 mL)
Directions
- Combine the dressing ingredients in a large bowl and whisk until combined. Set aside.
- Heat a large pan over medium-high heat for 3–4 minutes. TIP: Cast iron is great for this recipe because it gets the shrimp nice and charred. You can also use a nonstick or stainless steel pan.
- Coat the shrimp with the seasoning then cook for 2–3 minutes per side, or until well browned and cooked through. Remove the shrimp from the pan and let cool briefly. TIP: Your shrimp is cooked when they turn an opaque pink color.
- Add the romaine to the bowl with the dressing and toss to coat.
- Lay the wraps on a flat surface. Divide the lettuce evenly onto the wraps. Top with the tomato, corn, black beans, 5 shrimp, green onions, and cheese. Roll them up like a burrito and slice in half before serving, if you’d like.
