Chimichurri Potatoes
These perfectly crispy air-fried potatoes are the ultimate side or snack. Serve them with one or both sauces for even more flavor!
Ingredients
- Potatoes
- 2 lbs. (1 kg) russet potatoes, cut into small wedges
- 2 tbsp (30 mL) butter, melted
- 1 tbsp (15 mL) olive oil
- ¼ cup (60 mL) grated cotija cheese
- 1 tsp (5 mL) Chimichurri Seasoning Mix
- Chimichurri Sauce
- 2-3 tbsp (30–45 mL) water
- 3 tbsp (45 mL) olive oil
- 1 lime, juiced
- ½ cup (125 mL) mayonnaise
- 1 avocado, peeled and pitted
- 2 tbsp (30 mL) Chimichurri Seasoning Mix
- Salt and pepper
- Red Pepper Sauce
- 1 tbsp (15 mL) hot sauce
- ¼ cup (60 mL) mayonnaise
- 1 jar (12 oz./350 g) roasted red peppers, drained
- 1 garlic clove, peeled
- Optional: Cilantro and additional cotija cheese
Directions
- Set the Deluxe Air Fryer & Oven to Heat & Crisp. Adjust the temperature to 375°F (190°C) with high fan and set the time to 30 minutes.
- Toss the potatoes, butter, oil, cheese, and seasoning in a large bowl. Place the potatoes in a single layer on an Air Fryer Rack.
- When the display says, “Add Food,” place the rack in the oven. Press start. Rotate the pan halfway through cooking.
- Meanwhile, choose which sauce to make, or make both!
• For the chimichurri sauce, add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 45 seconds. Remove and set aside.
• For the red pepper sauce, add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 30 seconds. Remove and set aside.
Top with cilantro and cheese, if you’d like, and serve with the sauce of your choice.

Cook's Tips:
To make this recipe in the Deluxe Air Fryer: Place the potatoes in a single layer on the trays of the Deluxe Air Fryer. Cook on AIR FRY for 22–24 minutes, rotating the trays and flipping the potatoes halfway through.
