|PAD THAI STIR FRIED VEGGIES|
Preheat 1 tbsp (15 mL) of vegetable oil over medium heat for 1-2 minutes. Cook ½ cup (125 mL) water chestnuts, 1 chopped bok choy, 1 each yellow and red bell pepper cut into chunks, and 1 chopped onion until softened. Add sauce and bring to a boil. Garnish with 1-2 sliced chiles or jalapeno peppers and crispy chow mein noodles. Optional: Sear 1 package of cubed tofu in the oil and remove before adding the vegetables.
SHRIMP PAD THAI
Sauté 1 lb (450 g) of Shrimp, remove from skillet and cook 2 cups (500 mL) of stir fry veggies until cooked through. Add in sauce and reduce until thickened, then stir in cooked shrimp. Serve over white rice and garnish with mung bean sprouts.
