Fresh Green Bean Casserole

This classic casserole gets an update with fresh green beans and mushrooms. Make it fast with the help of the Deluxe Multi Cooker.

Ingredients

  • ¼ cup (60 mL) butter (½ stick)
  • 8 oz. (250 g) cremini mushrooms, finely chopped
  • 1   small shallot, minced
  • 2   garlic cloves, pressed
  • ¼ cup (60 mL) flour
  • 1 tbsp (15 mL) Black Garlic Seasoning Mix
  • 1 cup (250 mL) vegetable broth
  • ¼ cup (60 mL) heavy cream
  • ¼ cup (60 mL) white wine
  • 2 lbs. (1 kg) green beans, trimmed and cut into bite-size pieces
  • 2 cups (500 mL) fried onions, divided

Directions

  1. Set the Deluxe Multi Cooker to SEAR on high for 20 minutes. Add the butter to the inner pot and let it melt. Add the mushrooms, shallot, and garlic. Cook for 7–8 minutes, or until the veggies start to release their juices. Stir in the flour and cook for an additional minute. Press CANCEL.
  2. Add the remaining ingredients, except the fried onions, to the inner pot. Set to CUSTOM (high pressure) for 7 minutes. When the timer is up, let the pressure naturally release for 10 minutes. Press CANCEL and press STEAM RELEASE.
  3. Stir in half of the fried onions. Transfer to a serving bowl and top with the remaining fried onions before serving.

Cook's Tips:

You can swap the white wine for more broth. 

If you don’t have Black Garlic Seasoning Mix, you can add an extra clove of garlic or substitute with Garlic & Herb Rub.
