Peppermint Patty Whoopie Pies

Cool, minty, and perfectly chocolatey, this dreamy dessert is like a wintery hug that’s fun to make and even more fun to share.

Ingredients

  • 3/4 cup (175 mL) semi-sweet chocolate morsels
  • 1/4 cup (60 mL) butter
  • 1/2 cup (100 mL) sugar
  • 1   egg
  • 3/4 cup (175 mL) all-purpose flour
  • 15   Crème de menthe chocolate candies
  • 1/4 cup (60 mL) white or semi-sweet chocolate morsels
  • 10-12   mini foil-wrapped peppermint patty candies, such as See's Dark Peppermints

Directions

  1. Preheat oven to 375°F (190°C). Line the 

  2. Combine the chocolate morsels and butter in a small microwave-safe bowl. Microwave on HIGH for 40–60 seconds, or until smooth, stirring occasionally. Transfer the chocolate to the bowl of the Deluxe Stand Mixer and add the sugar and egg. MIX for 45 seconds, or until well blended. Add the flour and MIX for 45 seconds, or just until the flour is incorporated.
  3. Using a 1-tbsp (15- mL) measuring spoon, drop 24 level scoops of batter, 1" (2.5 cm) apart, onto the lined pan. Bake for 10–12 minutes, or until the edges are just set.
  4. Meanwhile, place the white or semi-sweet chocolate morsels into a microwave-safe bowl. Microwave, uncovered, on HIGH for 30–60 seconds, or until melted and smooth, stirring once. Set aside.
  5. Remove the sheet pan from oven. While still hot, carefully turn over half of the cookies using a small spatula. Top with a peppermint candy, then place another cookie on top. Let the candy melt slightly and become soft, about 5 minutes, then carefully press down on the tops of the cookie sandwiches to push the melted candy to the edges. Drizzle the melted chocolate over the cookies.

Cook's Tips:

If you do not have Parchment Paper, lightly brush pan with vegetable oil. Bake cookies and fill with peppermint patties. Transfer sandwiches to cooling rack and decorate as directed above. Repeat with remaining batter.
