Homestyle Turkey Breast

Ingredients

  • 1 5-6 lb (2.25-2.72 kg) bone-in turkey breast
  • 1   lemon
  • 1 jar (12 oz/350 g) turkey gravy
  • 1 cup (250 mL) water
  • 2 tbsp (30 mL) Dijon mustard
  • ½ tsp (2 mL) dried oregano leaves
  • ½ tsp (2 mL) dried basil leaves
  • ½ tsp (2 mL) salt
  • ¼ tsp (1 mL) ground black pepper

Directions

  1. Preheat oven to 325°F (160°C). Pat the turkey dry with paper towels (see cook’s tip). Trim any excess fat, if necessary. Place, the turkey breast, skin side up, in the Fully Glazed Stone Round Baker.
  2. Juice the lemon into a small mixing bowl. Add the remaining ingredients and mix well. Pour gravy mixture over turkey, coating well.
  3. Bake for 30 minutes. Remove the turkey from the oven and baste the breast with the pan juices. Continue baking for 2 hours, and 30 minutes to 3 hours, basting every 30 minutes until the meat registers 165°F (74°C) in the thickest part and juices run clear. Remove the baker to a cooling rack and transfer the turkey breast to a cutting board. Let rest for 10 minutes before carving.
  4. For the gravy, strain the pan juices through a mesh collander; skim off any fat, if necessary. Carve turkey into slices using Carving Set. Serve with gravy.
