S’mores Layer Cake
Classic flavors of s’mores that remind you of bonfires.... chocolate, marshmallow, and graham crackers come together for a decadent sweet treat.
Ingredients
- Cake
- 1 pkg. (15.25 oz./ 432 g) yellow cake mix
- 2 cups (500 mL) unsweetened applesauce
- 2 cups (500 mL) crushed graham crackers (9 crackers), divided
- Ganache
- 1 cup (250 mL) milk chocolate chips
- ½ cup (125 mL) heavy cream
- 1 tbsp (15 mL) butter
- Marshmallow Frosting
- ¾ cup (175 mL) butter (1 ½ sticks), softened
- 2 oz. (60 g) cream cheese, softened
- 1 cup (250 mL) powdered sugar
- 1 jar (7.5 oz./213 g) marshmallow crème
Directions
- Preheat the oven to 350°F (180°C). Lightly grease the Round Cake Pans.
- Beat the cake mix, applesauce, and ½ cup (125 mL) of the graham crackers for 2 minutes with the Deluxe Stand Mixer. Pour the batter evenly into the cake pans, about 1 cup (250 mL) per pan.
- Bake for 23-25 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to rest for 10 minutes before removing to cool completely (about 1 hour).
- Place the chocolate chips, cream, and butter in a microwave safe bowl. Microwave for 30 seconds and then whisk until smooth. The mixture will thicken as it cools.
- CREAM together the butter, cream cheese, powdered sugar, and marshmallow cream for 2 minutes and 50 seconds in the Deluxe Stand Mixer, or until well blended and fluffy.
- To assemble, top the first layer with a quarter of the ganache, then a quarter of the frosting. Sprinkle with a quarter of the remaining graham cracker crumbs over the top of the frosting. Repeat with each layer.
