Speedy Zucchini Hashbrowns
This easy, two-ingredient recipe is a tasty start to the day or a simple lunch.
- 1 zucchini
- 2 tbsp (30 mL) finely grated Parmesan cheese
Preheat a greased griddle or nonstick pan to medium heat. Grate zucchini (we used a Veggie Strip Maker), and combine with cheese.
Spread over griddle; press down firmly to pack with turner. Cook 5–6 minutes; flip using two turners. Cook an additional 5–6 minutes or until cooked through and golden brown.
