Create-a-Party Dip, Fiesta Chicken Dip

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1 garlic clove, pressed
  • 1 cup (4 ounces) shredded Mexican blend cheese
  • 3/4 cup medium thick and chunky salsa
  • 1 cup chopped cooked chicken
  • 1/4 cup sliced pitted ripe olives
  • 2 tablespoons snipped fresh cilantro
  • Lime Tortilla Chips (optional)

Directions

  1. Preheat oven to 350°F. In Small Batter Bowl, combine cream cheese and garlic. Add shredded cheese; mix until well blended. Spread onto bottom of Mini-Baker.

  2. Spoon salsa over cheese. Sprinkle evenly with chicken and olives.

  3. Bake 22-25 minutes or until dip is heated through and outside edge is bubbly. Sprinkle with cilantro before serving, if desired. Serve warm with Lime Tortilla Chips, if desired.

  • 3 1/2 cups

Cook's Tips:

This recipe can be easily doubled and baked in the Deep Covered Baker, if desired. Bake at 350°F 25-30 minutes or until heated through.

Goat cheese is a white goat's milk cheese noted for its distinctive tart flavor. If desired, 4 ounces of cream cheese can be substituted for the goat cheese.

To save time before your party, purchase a rotisserie chicken the night before the event and remove the breast meat to yield 1 cup chopped chicken. The rest of the chicken can be served to your family the night before the party.
