Milk Bread Rolls

These fluffy, foolproof dinner rolls are the perfect side for any meal. They’re simple to make and always a hit at the table!

Ingredients

  • 1½ cups (375 mL) milk, divided, plus more for brushing
  • 4¼ cups (1.03 L) bread flour, divided
  • ¼ cup (60 mL) sugar
  • ¼ cup (60 mL) butter, softened (½ stick)
  • 1 pkg (¼ oz./8 g) instant yeast (2¼ tsp/11 mL)
  • 1 tsp (5 mL) salt
  •  Oil for greasing

Directions

  1. Whisk together ½ cup (125 mL) of the milk and ¼ cup (60 mL) of the flour in a microwave-safe bowl. Microwave for 2 minutes, until the mixture becomes thick, lumpy, and hard to stir, stopping to stir every 30 seconds. Cool for at least 10 minutes, or up to an hour.
  2. Add the cooled, thickened milk mixture, along with the remaining milk, remaining flour, sugar, butter, yeast, and salt to the Deluxe Stand Mixer fitted with the dough hook.
  3. Set to KNEAD for 8 minutes.
  4. Remove the bowl from the mixer and cover with plastic wrap. Let the dough rise until it doubles in size, about 1–2 hours.
  5. Press the dough down to deflate and transfer it to a lightly oiled surface. Divide the dough into 20 pieces. Shape each piece into a smooth ball by gently rolling it between your palms.
  6. Lightly grease both 9" (23-cm) Round Cake Pans and place 10 balls of dough into each pan. Cover the pans with plastic wrap and let the dough rise until it doubles in size, about 1–2 hours. The rolls should be very puffy with little to no space in between. Preheat the oven to 350°F (175°C).
  7. Brush the rolls with 1–2 tbsp (15–30 mL) of milk.
  8. Bake for 20–25 minutes, or until golden brown. Rest for 10 minutes before serving.

Cook's Tips:

The cooked flour and milk mixture is called a tangzhong. It creates a fluffy bread that stays soft for days!

Brushing the dough with milk helps the rolls get nice and brown as they bake. 

This dough can also be shaped into a loaf and baked in a Brilliance Nonstick Long Loaf Pan. Let the dough rise in the pan, covered, until it doubles in size, about 1–2 hours, and bake at 350°F (175°C) for 1 hour to 1 hour and 10 minutes.
