Need a fast side for dinner or something to serve instead of plain rolls? These muffins come together quickly with ingredients you already have.

Ingredients

  • ¼ cup (60 mL) butter (½ stick)
  • 2 tsp (10 mL) Italian Seasoning Mix
  • 3   garlic cloves, peeled and diced
  • 2 cans (16.3 oz. or 340 g each) buttermilk biscuits
  • 1 oz. (30 g) Parmesan cheese, finely grated (½ cup/125 mL)
  • 8 oz. (250 g) mozzarella cheese, coarsely grated (2 cups/500 mL)
  •  Optional: Marinara sauce for serving

Directions

  1. Preheat the oven to 350°F (180°C). Microwave the butter, seasoning, and garlic in a large microwave-safe bowl for 1–2 minutes, or until the butter is melted. Separate the biscuits and cut each one into quarters.
  2. Add the quartered biscuits and Parmesan to the garlic butter; toss evenly to coat.
  3. Distribute half of the biscuit dough into all 12 wells of an ungreased Muffin Pan. Top the dough with half of the mozzarella. Cover with the remaining biscuit dough and sprinkle the remaining mozzarella on top.
  4. Bake for 22–25 minutes, or until golden brown. Cool for 5 minutes before removing from the pan. Serve with marinara, if you’d like.
