Ways to Use
- Serve over rice for a delicious meal (Indian-Style Rice Meal Mix) and with naan (Flatbread Mix).
- You can make it with chicken or any vegetarian option. Try using 2 cans of drained and rinsed chickpeas, roasted or blanched cauliflower, paneer, or your other favorite proteins and veggies.
- There is a dairy allergen in the mix, but coconut milk can be used in place of the heavy cream.
Butter Chicken | Makes 6 Servings
Ingredients
- 1 tbsp (15 mL) vegetable oil
- 1 onion, diced
- 1½ lbs. (680 g) boneless skinless chicken thighs or breasts, cut into bite-sized pieces
- ½ cup (125 mL) butter (1 stick)
- 1 can (14.5 oz./398 mL) crushed tomatoes
- 1 pkg Butter Chicken Meal Mix
- 1 cup (250 mL) heavy cream
Directions
- 1. Heat the oil in a large skillet over medium-high heat.
- 2. Add the onions and cook until softened and lightly golden brown, about 3–4 minutes.
- 3. Add the chicken, butter, tomatoes, and meal mix to the pan.
- 4. Mix well, bring to a simmer, and cook for 5 minutes.
- 5. Stir in the cream, then reduce the heat to low and simmer for 8–10 minutes, or until the chicken reaches 165°F (74°C).
- 6. Serve over rice or with flatbread.
