Champagne Toast Cups
Why should kids be the only ones to enjoy jiggly gelatin treats? This adults-only version is infused with fizzy champagne for a party treat worth toasting about. (Pssst ... you can make a kid-friendly batch with sparkling white grape juice!)
- 2 1 oz (30 g) envelopes unflavored gelatin
- 2 tbsp (30 mL) granulated sugar
- 2 cups (500 mL) champagne or white sparkling grape juice
- Colored sugar crystals (optional)
In a Small Micro-Cooker®, mix unflavored gelatin with granulated sugar. Stir in champagne or white sparkling grape juice and allow to stand 3 minutes or until gelatin is incorporated and carbonation dissipates. Microwave, covered, on HIGH 3 minutes or until gelatin and sugar are dissolved, stirring after each minute (the mixture will be hot). Pour into the Deluxe Mini-Muffin Pan and let the pan sit at room temperature 15 minutes. Refrigerate 1 hour or until firm. Unmold and remove with the releasing end of the Cake Tester & Releasing Tool. Sprinkle with colored sugar crystals immediately before serving.
