Champagne Toast Cups

Why should kids be the only ones to enjoy jiggly gelatin treats? This adults-only version is infused with fizzy champagne for a party treat worth toasting about. (Pssst ... you can make a kid-friendly batch with sparkling white grape juice!)  


  • 2 envelopes 1 oz (30 g) unflavored gelatin
  • 2 tbsp (30 mL) granulated sugar
  • 2 cups (500 mL) champagne or white sparkling grape juice
  •  Colored sugar crystals (optional)


  1. In a 1 qt. (1 L) Micro-Cooker, mix unflavored gelatin with granulated sugar. Stir in champagne or white sparkling grape juice and allow to stand 3 minutes or until gelatin is incorporated and carbonation dissipates. Microwave, covered, on HIGH 3 minutes or until gelatin and sugar are dissolved, stirring after each minute (the mixture will be hot). Pour into the Mini Muffin Pan and let the pan sit at room temperature 15 minutes. Refrigerate 1 hour or until firm. Unmold and remove with the releasing end of the Cake Tester & Releaser. Sprinkle with colored sugar crystals immediately before serving.
