Oatmeal Chocolate Raisin Cookies
Fill the cookie jar with homemade treats like these and watch the smiles begin.
Ingredients
- 1½ cups (375 mL) all-purpose flour
- 1 tsp (5 mL) baking soda
- 1 tsp (5 mL) cinnamon
- 1 cup (250 mL) butter or margarine, softened
- ¾ cup (175 mL) packed brown sugar
- ½ cup (125 mL) granulated sugar
- 2 eggs
- 2¾ cups (650 mL) old-fashioned or quick oats
- 1½ cups (375 mL) chocolate-covered raisins
- 1 cup (250 mL) chopped pecans (optional)
Directions
- Preheat the oven to 350°F (175°C). In a small mixing bowl, combine the flour, baking soda, and cinnamon; mix well and set aside.
- In a large mixing bowl, beat the butter and sugars until creamy. Add the eggs and beat well. Add the flour mixture; mix well. Stir in the oats, raisins, and pecans (if using).
- Using the Medium Scoop, drop level scoops of the dough, 2" (5 cm) apart, onto the Rectangle Stone. Flatten the dough slightly.
- Bake for 13-15 minutes or until the cookie edges are golden brown. Cool for 3-5 minutes on the stone then remove to a cooling rack. Cool the cookies completely. Repeat with the remaining dough. Store the cookies in a tightly covered container.
