Apricot Linzer Bars
If it's your turn to bring the office treats, these old-world, spicy fruit bars are just the right thing.
- 1 1/4 cups all-purpose flour
- 1 1/4 cups powdered sugar
- 1/2 teaspoon Cinnamon Plus® Spice Blend
- 3/4 cup walnuts, finely grated
- 1/2 cup butter or margarine, melted
- 1 small orange
- 2/3 cup apricot preserves
Microwave butter in Small Micro-Cooker® on HIGH 30-45 seconds or until melted. Using Zester/Scorer, zest orange with short strokes to measure 1 1/2 teaspoons zest. Add butter and orange zest to Batter Bowl; mix until crumbly. Reserve 3/4 cup crumb misture. Press remaining crumb mixture onto bottom of Square Baker.
Spread preserves over crust to within 1/4 inch of edge using All-Purpose Spreader. Sprinkle with reserved crumb mixture, pressing gently into preserves.
Bake 27-32 minutes or until preserves are bubbly and top is golden brown. Cool completely. Cut into bars. Store covered at room temperature.

It's easy to cut these bar cookies into triangles. First, cut into 16 squares, then cut each square diagonally in half to make 32 triangles.
Pumpkin pie spice or ground cinnamon can be substituted for Cinnamon Plus® Spice Blend, if desired.
If preserves contain large pieces of apricot, use the Professional Shears to snip the fruit pieces more finely.
