Apple Berry Crisp

Ingredients

    Topping
  • 1/4 cup butter or margarine, melted
  • 1/4 cup chopped almonds, pecans or walnuts
  • 1 1/2 cups old-fashioned or quick oats
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon Korintje Cinnamon
    Fruit Filling
  • 6 medium Granny Smith apples
  • 1   lemon
  • 1 package (12 ounces) frozen unsweetened mixed berries
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon Korintje Cinnamon
  •  Vanilla ice cream (optional)

Directions

  1. For topping, microwave butter in Large Micro-Cooker® on HIGH 45-60 seconds or until melted. Chop nuts using Food Chopper. Add nuts, oats, brown sugar and cinnamon to melted butter; mix well. Microwave 3 minutes or until browned and bubbly, stirring halfway through cooking time. Pour mixture out onto sheet of Parchment Paper; cool.

  2. For fruit filling, peel, core and slice apples using Apple Peeler/Corer/Slicer. Cut apples in half using Utility Knife. Separate slices into large Bamboo Fiber Mixing Bowl. Zest lemon using Zester/Scorer to measure 1/2 teaspoon zest. Juice lemon using Juicer to measure 2 teaspoons juice. Add berries, zest and juice to bowl; toss gently using Mix 'N Scraper®. In small Bamboo Fiber Mixing Bowl, combine granulated sugar, flour and cinnamon. Add to apple mixture; toss to coat evenly.

  3. Spoon apple mixture into Square Baker. Microwave on HIGH 14-16 minutes or until apples are tender, turning baker after 8 minutes. Sprinkle with topping. Continue microwaving 2 minutes. Let stand at least 30 minutes. Serve warm or at room temperature with vanilla ice cream, if desired.

Cook's Tips:

Four large apples can be substituted for the 6 medium apples. You need about 2 pounds of apples for this recipe.

There's no need to thaw the mixed berries. If strawberries are large, cut them in half.

Ground cinnamon can be substituted for the Korintje Cinnamon, if desired.

To prepare this dessert in a conventional oven, preheat oven to 375°F. Prepare topping as recipe directs except do not microwave. Spoon fruit filling into Square Baker and sprinkle with topping. Bake 40-45 minutes or until apples are tender.
