Toad in a Hole With Candied Bacon

Ingredients

  • 12 oz. (350 g) bacon
  • 3 tbsp (45 mL) Honey-Walnut Blend
  • 5 slices white or wheat bread
  • 2 tbsp (30 mL) butter, melted, divided
  • 5   eggs
  •  Salt and black pepper

Directions

  1. Preheat the oven to 400°F (205°C).
  2. Lay the bacon out in a flat layer on a sheet pan. Sprinkle the seasoning over the bacon evenly. Bake for 18–20 minutes. Remove the bacon from the pan and drain on a paper towel.
  3. Brush 1 tbsp (15 mL) of the butter on another sheet pan and lay the slices of bread on a large cutting board. Brush the rest of the butter on one side of each slice.
  4. Use the wide serrated end of the Pepper Corer to cut a hole in each slice. Place the circles of bread, butter-side up, in one corner of the sheet pan.
  5. Place the bread, butter-side up, on the pan. Crack an egg into a small bowl, then pour it into the hole. Sprinkle the salt and pepper on the top. Repeat with remaining eggs, bread, salt, and pepper
  6. Bake for 8–10 minutes, or until the egg whites are set, but the yolk is still a little runny. Serve with the candied bacon and the cut out bread for dipping.
