Toad in a Hole With Candied Bacon
Ingredients
- 12 oz. (350 g) bacon
- 3 tbsp (45 mL) Honey-Walnut Blend
- 5 slices white or wheat bread
- 2 tbsp (30 mL) butter, melted, divided
- 5 eggs
- Salt and black pepper
Directions
- Preheat the oven to 400°F (205°C).
- Lay the bacon out in a flat layer on a sheet pan. Sprinkle the seasoning over the bacon evenly. Bake for 18–20 minutes. Remove the bacon from the pan and drain on a paper towel.
- Brush 1 tbsp (15 mL) of the butter on another sheet pan and lay the slices of bread on a large cutting board. Brush the rest of the butter on one side of each slice.
- Use the wide serrated end of the Pepper Corer to cut a hole in each slice. Place the circles of bread, butter-side up, in one corner of the sheet pan.
- Place the bread, butter-side up, on the pan. Crack an egg into a small bowl, then pour it into the hole. Sprinkle the salt and pepper on the top. Repeat with remaining eggs, bread, salt, and pepper
- Bake for 8–10 minutes, or until the egg whites are set, but the yolk is still a little runny. Serve with the candied bacon and the cut out bread for dipping.
