Greek Yogurt Alfredo Sauce
This healthy version of alfredo uses greek yogurt instead of cream!
Ingredients
- 1 tbsp (15 mL) butter
- 2 garlic cloves, pressed
- 1/4 tsp (1 mL) ground nutmeg
- 1/4 tsp (1 mL) salt
- 2 tbsp (30 mL) cornstarch
- 1/2 cup (125 mL) milk
- 1 oz (30 g) fresh Parmesan cheese, grated (1/4 cup/50 mL)
- 3/4 cup (175 mL) 2% plain low-fat Greek yogurt
Directions
Place butter, pressed garlic, nutmeg and salt in a bowl. Microwave uncovered, on HIGH 1 minute or until the butter is melted.
Place cornstarch in a small bowl. Slowly whisk in the milk. Whisk the milk mixture into the bowl with the garlic mixture. Microwave, uncovered, on HIGH 1 minute to 1 minute 30 seconds, stirring every 30 seconds or until the sauce is thickened. Whisk until smooth. Stir in the Parmesan cheese and yogurt (sauce will be thick).
Yield:
- 1 1/3 cups (325 mL)

Cook's Tips:
Traditional alfredo sauce uses whipping cream instead of 2% Greek Yogurt. This version has half the fat!
