Awesome Au Gratin Potatoes

Ingredients

  • 4 oz (125 g) cream cheese
  • ½ cup (125 mL) sour cream
  • 1 cup (250 mL) half and half
  • 8 oz (250 g) white cheddar cheese, grated (2 cups/500 mL)
  • 1   garlic clove, diced
  • ½ tsp (2 mL) salt
  • ¼ tsp (1 mL) black pepper
  • 2 ½ lbs (1.1 kg) potatoes, peeled and thinly sliced
  •  oil for greasing
  •  optional: ½ tbsp (7 mL) fresh thyme leaves

Directions

  1. Preheat the oven to 375°F (190°C). Microwave the cream cheese in a large mixing bowl for 30-45 seconds, or until very soft. Add the sour cream and mix. Slowly whisk in the half and half. Add the shredded cheese, garlic, salt, and pepper to the bowl and microwave for 5-6 minutes, stirring every minute, until the cheese is fully incorporated.
  2. Add the sliced potatoes to the cheese mixture and toss to combine. Lightly grease one of the Long Loaf Pans. Spoon the potato mixture into the greased pan. Adjust the top layer by shingling the potato slices if you’d like a prettier presentation.
  3. Cover the loaf pan with foil and bake for 60 minutes. Remove the foil and bake an additional 30-35 minutes or until potatoes are tender and lightly browned. Sprinkle with thyme leaves, if you’d like.
  4. Rest for five minutes before serving.

This recipe also fits in the 8" (20-cm) Brilliance Nonstick Square Pan! Check the doneness of the potatoes 10 minutes sooner as cooking time may change.
