Zucchini Nachos

Ingredients

  • 3 medium zucchini
  •  Oil for brushing
  •  salt and pepper to taste
  • 1/2 cup (125 mL) shredded cheddar cheese
  • 1 can (15 oz) black beans
  • 1 small tomato, seeded, chopped
  • 1 tbsp (15 mL) Chipotle Rub

Directions

  1. Heat the Double Burner Grill over medium heat 3 – 5 minutes. Cut three zucchinis into ¼"-thick pieces using the Crinkle Cutter then toss with oil, salt and pepper in the Classic Batter Bowl. Place in a single layer on the pan, cover with two Grill Presses and cook 5 – 6 minutes, turning once, until grill marks appear. Sprinkle with ½-cup shredded cheddar cheese and cook until the cheese is melted. Arrange the zucchini on a platter and top with mixture of half of a 15-oz can of black beans, 1 small seeded and chopped tomato and 1 tbsp Chipotle Rub. Add other fan favorite toppings of your choice.
