Zucchini Nachos

Ingredients

  • 3 medium zucchini
  •  oil for brushing
  •  salt and pepper to taste
  • ½ cup (125 mL) shredded cheddar cheese
  • 1 can (15 oz/425 g) black beans
  • 1 small tomato, seeded, chopped
  • 1 tbsp (15 mL) Chipotle Rub

Directions

  1. Heat the Double Burner Grill over medium heat for 3–5 minutes.

  2. Cut the three zucchinis into approximately ¼"-thick pieces using the Quick Slice. Toss the slices with oil, salt, and pepper in the Classic Batter Bowl.

  3. Place the zucchini slices in a single layer on the grill pan, and cover them with two Grill Presses. Cook for 5–6 minutes, turning once, until grill marks appear.

  4. Sprinkle the zucchini with ½-cup shredded cheddar cheese and cook until the cheese is melted.

  5. Remove the zucchini from the grill pan and arrange it on a platter. Top it with a mixture of half of a 15-oz can of black beans, tomato and Chipotle Rub. Add other fan-favorite toppings of your choice.
