Mac 'n Cheese Soup

By starting with a packaged macaroni & cheese dinner, you can have this soup ready in a jiffy. 

Ingredients

  • 1 package (14 ounces) deluxe-type macaroni & cheese dinner (including cheese sauce pouch)
  • 1 cup broccoli, chopped
  • 1/2 cup onion, chopped
  • 1 cup water
  • 2 1/2 cups milk
  • 1 can (10 3/4 ounces) condensed cheddar cheese soup
  • 1 cup cubed cooked ham

Directions

  1. Cook macaroni according to package directions in (4-qt.) Casserole; drain in medium Stainless Mesh Colander and set aside. 

  2. Meanwhile, chop broccoli and onion using Food Chopper

  3. Combine broccoli, onion and water in Casserole. Bring to a boil; cook 2 minutes. Do not drain. 

  4. Stir in cooked macaroni, cheese sauce from pouch, milk, cheese soup and ham. Return to a boil, stirring occasionally. Ladle soup into 6 bowls using Nylon Ladle

Yield:

  • 6  servings of 1 1/3 cups

Cook's Tips:

Frankfurters, cut into 1/2-inch slices, can be substituted for the cubed ham.

Any leftover soup should be covered and refrigerated. Soup will thicken once it is refrigerated, but when reheated in the microwave oven, the mixture becomes a saucy entrée.
