Pressure Cooker Beef Bourguignon

Give classic beef stew a French upgrade! With the Deluxe Multi Cooker, this impressive dish is easy to make and clean up.

Ingredients

  • 3 slices bacon, cut into 1" (2.5-cm) pieces
  • 1½ lbs. (700 g) beef chuck, cut into 1–2" (2.5–5-cm) cubes
  • ½ tsp (2 mL) salt
  • ¼ tsp (1 mL) pepper
  • 3 tbsp (45 mL) butter
  • ½ cup (125 mL) flour
  • 3 cups (750 mL) beef broth
  • 1½ cups (375 mL) red wine
  • 1 lb. (450 g) baby potatoes, unpeeled
  • 2 large carrots, peeled and chopped
  • 1 cup (250 mL) frozen pearl onions or 1 large onion, chopped
  • 2   stalks celery, chopped
  • 8 oz. (250g) baby bella mushrooms, sliced
  • 3   garlic cloves, sliced
  • 2 tbsp (30 mL) tomato paste
  •  Optional: Chopped parsley, crusty bread

Directions

  1. Set the Deluxe Multi Cooker to SEAR on high for 40 minutes and press START. Add the bacon to the inner pot and cook for 8–10 minutes. Remove the bacon from the pot.
  2. Add half of the beef to the inner pot and cook uncovered for 8–10 minutes, or until brown on all sides. Remove the beef from the pan and repeat with the remaining beef. Remove the beef from the inner pot and set aside.
  3. Melt the butter in the inner pot and add the flour. Cook, for 3–4 minutes, stirring constantly. Return the beef and bacon to the pan and add all the remaining ingredients. Lock the lid and select BEEF/PORK; press START.
  4. When the timer is up, let the pressure release naturally for 10 minutes, then press the steam-release button. Garnish with fresh parsley and serve with crusty bread, if you’d like.

Cook's Tips:

*Safety Tip: The stainless steel inner pot will be hot during and after cooking. Use a long-handled utensil when stirring and removing food.

Slow cooker directions: Follow the directions up to step 3. Instead of selecting the BEEF/PORK setting, set the Deluxe Multi Cooker to SLOW COOK on low for 8 hours. After cooking, set the Deluxe Multi Cooker to SEAR and let the stew simmer until it thickens.
