Pressure Cooker Chicken Dumplings

These dumplings have the same great flavor of take-out but are a healthier alternative. Serve with your favorite dipping sauces for a light meal or appetizer.

Ingredients

    Chicken Filling
  • 1 ½" (1-cm) piece fresh gingerroot, peeled
  • 5–6   cilantro sprigs
  • 1   green onion
  • 1   garlic clove
  • 6 oz. (175 g) ground chicken
  • 2 tsp (10 mL) soy sauce
  • ⅛ tsp (0.5 mL) black pepper
  • ½ tbsp (7 mL) canola oil
  • 12 3½" (9-cm) square wonton wrappers
    Chutney
  • 1   jalapeño
  • 1 ½" (1-cm) piece fresh gingerroot, peeled
  • 1   garlic clove
  • 2 tsp (10 mL) rice wine vinegar
  • 1 pint (473 mL) cherry or grape tomatoes
  • ½ tsp (2 mL) salt

Directions

  1. For the filling, grate the ginger with the Microplane® Zester to measure a ¼ tsp (1 mL). Finely chop the cilantro and green onion with the 8" (20-cm) Chef’s Knife. Add the ginger, cilantro, green onion, garlic pressed with the Garlic Press, chicken, soy sauce, pepper, and oil into a small bowl and mix until well combined.

  2. For the chutney, cut the top off the jalapeño and remove the seeds using the Core & More. Cut the jalapeño into chunks and place them into the Manual Food Processor along with the remaining chutney ingredients; process until finely chopped. Add the chutney mixture to the inner pot of the Deluxe Multi Cooker.

  3. Use the Small Scoop to scoop the filling in the center of each wonton wrapper. Use the Chef’s Silicone Basting Brush to brush the edges of each wonton wrapper with water. Pull the top corner down to the bottom, folding the wrapper over the filling to form a triangle. Then, press the edges firmly to seal. Repeat with the remaining wonton wrappers.

  4. Line the bottoms of the small and large Steamer Baskets with parchment paper. Line the wall of each basket with 4 upright dumplings. Lay the remaining dumplings flat in the centers (see photo below). Place the large basket on top of the chutney mixture in the Multi Cooker and place the small basket into the large basket.

  5. Lock the lid, select the STEAM setting, and press START. When the timer is up, press CANCEL. Press the steam-release button to manually release the pressure. Carefully remove the baskets.* Remove the dumplings from the baskets and serve with the chutney.
