It's a Wrap
So long, cabbage. Corned beef is branching out. For a delicious lunchtime spin on the Irish classic, follow the recipe for Grilled Chicken, Ham & Swiss Wraps from The Pampered Chef® Season’s Best Spring/Summer 2012. Just sub the chicken and ham out for 12 ounces of deli corned beef. Using a spinach flour tortilla (instead of a flour tortilla), spread mayonnaise, garlic and Dijon Mustard Rub in the center, then proceed with the recipe as directed.
Sweet and Savory
Whether you need a quick after-school snack or a potluck-worthy dessert, these Sweet 'N Salty Pretzel Treats fit the bill. Using the Coating Tray, microwave 6 ounces of vanilla Almond Bark in the second coating tray for about two minutes. Then, place one cup of mini pretzel twists in the first tray. Dip mini pretzel twists in melted Almond Bark and place on parchment paper. Give them a fun sprinkling of colored sugar or sprinkles, and then cool until the bark is set. Serve them on their own or use them as a fun cupcake topper.
Delight the kiddos with a fun spin on traditional marshmallow treats. Using your favorite recipe, sub a toasted oat marshmallow cereal (such as Lucky Charms) in place of the crispy rice cereal. Get extra festive with a pop of green food coloring.
Corned Beef Puffs
Put an Irish spin on Greek Spinach Puffs from Season's Best® Recipe Collection (Fall/Winter 2012). Instead of Greek filling, use 8 oz. thinly sliced deli corned beef and 2 green onions in the Manual Food Processor or Food Chopper. Stir in 1 cup shredded Swiss cheese, 3 tbsp. mayonnaise and 1 tbsp. country-style Dijon mustard. Then just follow the recipe.
Irish Eggs in a Frame
Trade in a full Irish breakfast for this light, quick meal. Heat 1 tsp. canola oil in a 12" Executive Skillet over medium-high heat for 1 - 3 minutes. Add in ½-inch bell pepper rings and crack an egg into each. Cook 5 - 7 minutes or until tops of eggs are set. Sprinkle with shredded Swiss cheese, salt and pepper.
St. Patty's Cupcake
Make your cupcakes extra lucky! First, bake and frost white cupcakes as you like. Then, flatten spearmint leaf candies with the Baker's® Roller and use the shamrockshaped Creative Cutter to create tasty cupcake toppers. Add a touch of green colored sugar or sprinkles.
