Rectangular Baker


Chocolate Fantasy Cake

2   cups all-purpose flour
2   cups sugar
1   cup water
1/2    cup reduced-calorie stick margarine
1/4    cup unsweetened cocoa powder
2   eggs
1/2    cup buttermilk
1   tsp baking soda
1   tsp vanilla
1/2    tsp salt
2   cups powdered sugar
2   tablespoons unsweetened cocoa powder
3    tbsp (45 mL) skim milk
1   tbsp (15 mL) reduced-calorie stick margarine, melted
  1. Preheat oven to 400F. Lightly spray Rectangular Baker with vegetable oil using Kitchen Spritzer. In Classic Batter Bowl, combine flour and sugar. Combine water, margarine and cocoa powder in Petite Saucepan; bring to a boil. Add to flour mixture stirring until well blended. Add remaining cake ingredients; mix well. Pour into prepared Baker. Bake 20-25 minutes or until Cake Tester inserted in center comes out clean. Frost cake while still warm.
  2. For frosting, combine powdered sugar and cocoa powder in Small Batter Bowl. Add milk, vanilla and melted margarine; stir until smooth. Spread over warm cake with All-Purpose Spreader. Cool; cut into squares.
