Breakfast Burrito for One
Ingredients:

tbsp (30 mL) finely chopped onion |

tbsp (15 mL) finely chopped, seeded jalapeņo pepper |
| 2 |
eggs, lightly beaten |
| 1/4 |
cup (50 mL) shredded cheddar cheese (1 oz/30 g) |
| 1 |
8-in (20 cm) flour tortilla |
| 2 |
tbsp (30 mL) red or green salsa |
Directions:
| Finely chop onion and jalapeño pepper on Cutting Board - Bar Board. Heat (8-in./20 cm) sauté pan over medium-high heat. Add onion and jalapeño pepper; cook and stir until softened, about 5 minutes. Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted. |
| Place tortilla onto Bar Board. Spoon egg mixture over tortilla. Top with salsa and roll up. Serve immediately. |
