Breakfast Burrito for One



Ingredients:
2   tbsp (30 mL) finely chopped onion
1   tbsp (15 mL) finely chopped, seeded jalapeņo pepper
2   eggs, lightly beaten
1/4   cup (50 mL) shredded cheddar cheese (1 oz/30 g)
1   8-in (20 cm) flour tortilla
2   tbsp (30 mL) red or green salsa
Directions:
  1. Finely chop onion and jalapeño pepper on Cutting Board - Bar Board. Heat (8-in./20 cm) sauté pan over medium-high heat. Add onion and jalapeño pepper; cook and stir until softened, about 5 minutes. Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted.
  2. Place tortilla onto Bar Board. Spoon egg mixture over tortilla. Top with salsa and roll up. Serve immediately.
