Sweet Ginger Dressing



Ingredients:
1   3-in. (7.5-cm) piece fresh gingerroot, peeled
1/4   small onion
1   lemon
2   tbsp (30 mL) apple juice
2   tbsp (30 mL) honey
1   tbsp (15 mL) soy sauce
1   tbsp (15 mL) rice vinegar
1   tbsp (15 mL) canola oil
Directions:
  1. Grate ginger using Ginger Grater to measure 2 tbsp (30 mL). Finely chop onion. Juice lemon to measure 2 tbsp (30 mL) juice.
  2. Combine ginger, onion, lemon juice, apple juice, honey, soy sauce, vinegar and oil in small bowl. Whisk well.

Yield: 8 servings (1 cup/250 mL)
