Citrus Mint Tea Cooler

3   lemons, divided
2   oranges, divided
3   tbsp (45 mL) fresh mint leaves, coarsely chopped
4   tsp (20 mL) loose leaf black tea
4   cups (1 L) water
1/2   cup (125 mL) sugar
   Orange slices and mint sprigs (optional)
  1. Assemble Tea Infusion Pitcher for hot tea. Score 1 lemon and 1 orange lengthwise using Zester/Scorer. Juice lemons and oranges; set juices aside. Place lemon and orange peel, mint and tea leaves into infuser.
  2. Bring water and sugar to a boil in (1.5-qt./1.4-L) Saucepan. Cook 1 minute or until sugar has dissolved, stirring occasionally. Carefully pour sugar mixture into infuser. Place lid on pitcher; steep 5 minutes.
  3. Remove lid and infuser. Remove and discard tea mixture from infuser. Add juices to pitcher. Add ice; cover and refrigerate overnight. Serve tea over ice; garnish with orange slices and mint sprigs, if desired.

Yield: 5 servings (about 5 1/2 cups/1.3 L)
